Effortlessly hip minus any ounce of pretension, the trio running Elvis, all hail from other regions of Italy. They’ve made Rome their new home and are giving back to the city through their love of wine, hospitality, and great music, naturally.
An outsider myself, who once harbored her own dreams of serving wine to her adopted community, Elvis is a vicarious pleasure. Also, the wine is divine, and the company is fabulous.
The Dream Team
Max (Massimiliano) Cinque, AKA The Pharmacist, is originally from Puglia. He can frequently be found with a cigar in one hand, a glass in the other, and dishing advise for good living, in addition to good health.
Patrick de Nisi, AKA The Boss, comes from Campania, the region south of Rome and home to “bosses” of ‘The Godfather’ variety. He brings finance know-how and a steady business brain to the operation. He’s frequently on-site and always primed for hearty conversation and one more glass.
Valentina Vitale, AKA La Creativa, is a fiery Sicilian, living in Rome for a decade now, and a master at PR and communications. If she were art directing my social platforms I wouldn’t be asking subscribers to upgrade to support this publication.
The Look, Feel, and Flavor
Valentina describes the design as a cross between Paris and New York: minimal wood and steel with wine bottles and glassware in full view.
The list includes more than 300 labels, mostly Italian, many small producers and artisan winemakers.
Southern and Island wines are especially represented, as are French and a few other international wines. For bubble lovers, you’ll find niche micro-maison Champagne. All are available for sale or to enjoy on-premise.

Outdoors, the Elvis couldn’t be any more Roman. For a city that lives and breathes al fresco, even in winter heat lamps keep the sidewalk buzzing with customers.
According to Valentina, a night at Elvis is a whole an experience.
You come in for a glass of wine, and stay for the ambiance. There’s always laughter and chatter coming from the tables, and our customers are curious. They’re always discovering something new, whether it’s a Champagne or a wine from the Eolian Islands of Sicily.
Every night is different, but the’re a common thread: everyone here just wants to have a great time.
A Menu Meant for Wine Pairing
Cheese, charcuterie and antipasti shift with the seasons and represent all corners of Italy, including the islands. Bread comes from a local bakery.
For heftier appetites, their club sandwich as become an institution.
Why Elvis?
The wine bar, which debuted in April of 2022, is located on a quiet slope of Via di Priscilla, get it? Incidentally, all three partners also love music, live and none.
Five minutes from Piazza Vescovio—an elegant square better known for local, moneyed regulars than edgy hipsters—Elvis has changed the vibe in the Salario-Africano neighborhood.
